Lunches this Week...

This week's lunches...

Monday - Leftovers: fried potatoes, green beans and boneless pork chops.

Tuesday - Italian Sausage (made w/Turkey Meat) and sourdough breads.

Wednesday - A slice of pork roast left over from New Year's Day (frozen), with black-eyed peas and fried potatoes. The pork was glazed with an orange sauce that included nutmeg and orange peel.

Thursday (Today) - Leftover casserole made of elbow macaroni, taco meat, refried beans, and cheese.

Tomorrow (Friday) - A paste dish. Mix of tortellini and ravioli in a white sauce with shrimp and oysters.

That's the week...

Lunches this Week...

This week's lunches...

Monday - A holiday. Cheryl and I woke up in Redhouse, Maryland. That's about 6 hours from home. I was sick on Saturday and Sunday, but well enough to travel on Monday. I think my food intake for the day was a sandwich at Quiznos in Bluefield at about 5:30pm.

Tuesday - I stayed home and went to the doctor's. Don't remember eating anything until dinner - a bowl of potato soup at Big Daddy's (Tazewell County's best restaurant).

Wednesday - Still home sick. I had two scrambled eggs around lunch time.

Thursday (Today) - Soup and bread. I mixed Campbell’s Select's Italian Tomato with Basil & Garlic with some of their Golden Butternut Squash soup and top it off with mozzarella cheese. I took some French bread to school to dip in it.

Tomorrow (Friday) - If there's school I'll take leftovers: fried potatoes, green beans and boneless pork chops. Right now it looks as though it may be a snow day.

Lunch This Week...

This week's lunches...

Monday - Salad. Baby spinach, romaine lettuce, cheddar cheese, cucs, olives, ham, broc, raspberry walnut vinaigrette

Tuesday - Penne pasta with leg of lamb (cubed and fried), covered with an alfredo sauce, with diced green and red bell peppers

Wednesday - Corned beef and basmati rice. After eating the corned beef I put some Sri Racha HOT Chili Sauce on the rice...

Thursday (Today) - Snow day! I slept until about 10am (if you don't count getting up at 6:30 to call five other people and let the dog out for a few minutes). I had breakfast at about lunch time: a biscuit with butter, cheesy grits with butter, two eggs (scrambled, in butter), and three strips of bacon. Most of the above was covered liberally in coarse ground black pepper.

Tomorrow (Friday) - Green lentil soup with brown rice and boiled ham (if we have school).

Lunch This Week...

I like food. I like to cook, and I sometimes incorporate features of ethnic food from places I've lived into my cooking.

I generally make my own lunches and take them to school, and sometimes they become the topic of conversation. So, heck, an easy blog post: this week's lunches...

Monday - I was sooooooo sick! I stayed home. "Lunch" came at about 8pm and consisted of chicken broth and white crackers.

Tuesday - A chunk of corned beef (I cooked a brisket some time back and froze some) and some diced potatoes fried in bacon grease.

Wednesday - A slice of pork roast left over from New Year's Day (frozen, again), with black-eyed peas and fried potatoes. The pork was glazed with an orange sauce that included nutmeg and orange peel. French bread.

Today - A salad. That's rare, but I actually like salad. This one had romaine lettuce, baby spinach, cucumber, black olives, walnuts, a little cauliflower, a little broccoli, diced red bell pepper, a small amount of purple onion, and some bacon in it. Ranch dressing and French bread.

Tomorrow - A pasta dish I froze from leftovers a couple of weeks ago. It has ravioli and tortellini, some shrimp, some oysters, and an alfredo sauce.
